I made this salad a couple of days ago to use up some more spinach and we all enjoyed it. Any salad that has goat cheese in it pleases my taste buds.  Fresh and delicious!

Blueberry Spinach Salad*

About 2 c. Baby Spinach ( or torn)

1 c.Fresh Blueberries

½ c chopped Walnuts

¼ c. Goat Cheese (unless you love it like I d, then add more:)

1 Avocado sm. chunks

1 Orange halved and sectioned

½ Cucumber halved and sliced

Blueberry Maple Vinaigrette Dressing

4 tbs. Balsamic Vinaigrette

½ c. Olive Oil

½ Blueberries

1 tbs. Maple Syrup

a few Walnuts

Toss spinach with walnuts, cucumber, blueberries and orange (all bite sized).  Put all dressing ingredients in the blender and blend until smooth. Drizzle over salad. Add goat cheese and avocado. Give another very light toss if desired. Enjoy!
