Today was the day of thankful feasting. We’ve been treated
royally all weekend by our friends Jenny and Jeff. The warm welcome of friends
is much to be thankful for.
While Jenny and I cooked, Aneliese directed the placement and completion of the thanksgiving tree.
In the spirit of soaking up the moments of friendship, I’m
just going to share a recipe with you. It’s one of my childhood favorites
usually only eaten at Christmas and Thanksgving. I’ve revamped it a little but
it still is a taste of home. Add any fruit that you would like and sweeten the
whipping cream according to taste. I’ll be honest that I don’t really measure
but this is a rough idea of the amounts.
Holiday Fruit Salad
2 Bananas
1 Apple
2 c. canned peaches
1 orange
1 c. red grapes
1 c. Unsweetened fine
grated coconut
500 ml Whipping Cream
(whipped and sweetened with honey)
Chop fruit to
smallish bite sized pieces (including grapes) and combine in a bowl. Add coconut.
Fold in the Whip Cream. Enjoy!
